FRANKFORT, Ky. — In the years it takes Kentucky bourbon to mature in new oak barrels, producers have faced two certainties: They lose a portion of the aging whiskey to evaporation - known as the angel’s share - and pay a tax on the containers.

The fungus is a black mold-like growth that feeds off the “angel’s share” — the distilling industry term for the alcohol that evaporates from the wooden barrels.

Distillers refer poetically to the liquor that evaporates during that process as “the angel’s share.”

They bring a live version to Brooklyn as part of the impresario Andrew Ousley’s series the Angel’s Share.

Nightlife here will also get a boost this month, when Angel’s Share, a shuttered East Village speakeasy, is scheduled to open a pop-up version.
